In case you have been living under a rock lately, it seems as though “pumpkin” has taken over the world! You either love it or hate it! If pumpkin is on the shelves in the grocery stores and being served in my favorite coffee shops, that can only mean one thing – Fall has officially arrived!

Since recently moving to the South, I have developed a fondness for biscuits…I am proud to say I have mastered the basic biscuit recipe! The key to any good biscuit recipe is…DON’T overmix! Raspberry, Pear & Walnut Coffee Cake

I think you may have guessed by now that I really like baking coffee cakes! I especially like this one because of the addition of the fruit! Anything “Raspberry” and I am all over it! My mum makes a coffee cake very similar to this recipe, but instead of using fresh raspberries, she uses a meringue made from raspberry jam. I decided to step it up a notch and take that very basic sour cream based coffee cake recipe and add a mixture of my favorite fruits. Walnuts are used in my strudel topping, but you could use pecans and the outcome would be just as amazing! You could also substitute Blackberries or Blueberries instead of the Raspberries! Healthy Morning Glory Muffins

I am a muffin girl! I love myself a GOOD muffin recipe. Muffin recipes are typically “cook” friendly. In other words, very few bowls, minimal prep work and lots of bang for your buck! Morning Glory Muffins have always been one of my favorite kinds of muffins. They are not too sweet and filled with delicious ingredients you can usually find in your refrigerator or pantry (i.e. carrots, apples, raisins, nuts, etc.)

What makes these muffins healthy is that they require very little fat, in fact I only use 1 tablespoon of canola oil in this recipe! Most muffin recipes use 1/2 cup or more. This recipe uses ripe bananas and greek yogurt in place of the oil. If you are not a fan of raisins, by all means, eliminate them, try adding apricots or dates instead. In this Morning Glory Recipe I used pecans, but feel free to substitute walnuts. I just happened to have pecans in the fridge. Bake up a batch of these on a Fall Morning. Delicious with a nice, hot cup of tea!

Homemade Soft Pretzels

Just in time for Friday Happy Hour…hot out of the oven homemade soft pretzels! I paired mine with an icy cold Green Man ESB draft! For something sweeter, leave some pretzels plain, melt butter and brush it on the pretzels and then roll in cinnamon sugar. One of my kids favorites!

This is a really simple recipe that will bring smiles all around!
